Kranj’s newest pizzeria opened in 2023 and makes pizzas in the Neapolitan style. The secret is in the sourdough, which is fermented for at least 48 hours.
“We serve authentic Neapolitan style pizzas, characterised by a pronounced edge and thin dough, which, thanks to a long fermentation process, is full of flavour, soft as a cloud and melts in your mouth. They are topped with delicious ingredients such as mozzarella, aubergine, ricotta, prosciutto, olives, artichoke, spicy sausage and the list goes on,” explains the team of 400 Gradi, adding that all the ingredients are top quality and carefully selected, mostly from Italy.
In addition to pizzas, they offer Italian pasta and fresh salads. For a sweet treat, they highly recommend homemade tiramisu and other Italian desserts.
Why the name, 400 Gradi? Chef Armando Nevicato is happy to explain that back in 2015, when he was living in Austria, he revealed to his mother that he dreamed of having a pizzeria: “My mum asked me how many degrees I cooked my pizza at. I told her it was 380 or 400 degrees Celsius. She smiled and said: That will be the name of the pizzeria.”
Perhaps one more thing: Chef Armando Nevicato’s training in Naples led to him being certified by the Associazione Verace Pizza Napoletana (AVPN), which is considered the authority in the world of Neapolitan pizza.
